Brianna's Rice Pudding

Rice-pudding-star-anise

Ingredients

  • 1 cup short grain rice 
  • 1 cinnamon stick
  • 2 1/2 cups water
  • 3 cups whole milk, divided
  • 3/4 cups + 6 Tbsp granulated sugar
  • 2-3 star anise
  • Ground cinnamon for garnish

Directions

Rinse rice and soak overnight. Drain and set aside.

In a large pot, combine milk, cinnamon stick, and star anise. Bring to a boil, then simmer for 10 minutes.

Strain out spices. Set aside 1 cup of the spiced milk and return the rest to the pot.

Add rice and sugar. Cook on low heat for 40-50 minutes, stirring occasionally until rice is tender. Use reserved milk as needed to prevent sticking.

Refrigerate cooked rice.

Garnish with cinnamon before serving.
