Indulge in the Ultimate Chocolate Dessert

New Dining Services Director Ethan Drake loves to treat people to his famous Three Layer Chocolate Pâté. Each rich layer is carefully mixed and poured, one after the other, creating a luxurious dessert. When sliced, the smooth, decadent layers reveal a tantalizing display, just waiting to be savored.

The recipe comes from Chef Ethan’s first sous chef at the Strathallan Hotel in Rochester, New York. Now, the dish reminds him of where he’s been and gets him excited about where he’ll go from here.

Chocolate Pate ingredients and Chef Ethan

Ingredients

  • 2.5 oz Drambuie
  • 10 oz milk chocolate
  • 10 oz dark chocolate
  • 9 oz white chocolate
  • 2 oz heavy cream, divided
  • 1.5 oz Kahlua
  • 2 oz coffee liqueur


Directions

To make the first layer: Slowly melt the milk chocolate in a double boiler (on medium-low? What if they don’t have a double-boiler? Usually you can use a glass bowl placed on top of a saucepan with 1” of water in it and simmer the water) and mix in the Drambuie. Spread evenly on the bottom of a baking dish (what size?). Refrigerate for 1-2 hours or until fully set (this would be more like 2-3 hours I would think).

To make the second layer: Slowly melt the white chocolate in a double boiler and mix in the Kahlua. Fold in the heavy cream (until fully combined? Until smooth?). Spread evenly on top of the milk chocolate layer. Refrigerate for 1-2 hours (3-4?) or until fully set.

To make the third layer: Slowly melt the dark chocolate in a double boiler and mix in the coffee liqueur. Fold in the heavy cream. Spread evenly on top of the white chocolate layer. Refrigerate for 1-2 hours or until fully set.

Cut into rectangular bars and serve with love.
